At Heather Hill Farm our native Irish Dexter cows are only fed lush diverse grasses. As Dexter cattle have evolved and adapted to our harsh Irish climate they do not have to be confined to sheds in the winter time. being small hardy cattle they can sustain themselves outside with a little supplemental hay all winter long.

Dry aged for quality flavour

Our beef is dry aged for 21 days to enhance the flavour and quality of the meat The deep yellow colour of the fat is a testament to the quality grass the animal has eaten  over its life.
